This one-pot wonder is incredibly versatile — feel free to swap in whatever vegetables you have on hand. The turmeric gives it a beautiful golden color and a subtle earthy flavor that pairs perfectly with the cumin.

Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, carrot, red bell pepper, and green beans. Cook for 5 minutes, stirring occasionally.
- Stir in the rice, turmeric, cumin, salt, and pepper. Toast the rice for 1-2 minutes, stirring constantly.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover with a lid, and simmer for 15-18 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat, add the frozen peas, and let it sit covered for 5 minutes. Fluff with a fork and garnish with fresh cilantro or parsley.
