Instructions
- Bring a large pot of heavily salted water to a boil, add the penne pasta, and cook according to package directions until just al dente.
- In the last 2–3 minutes of pasta cooking time, add the broccoli florets to the same pot and cook until bright green and just tender.
- Drain the pasta and broccoli together, reserving about ½ cup of the starchy pasta cooking water, and set aside.
- Season the chicken pieces generously with salt, black pepper, and half of the minced garlic.
- Heat 1 tbsp of olive oil in a large skillet or pan over medium-high heat, add the chicken, and cook until golden brown on all sides and fully cooked through (about 5–7 minutes).
- Remove the chicken from the pan and set aside on a plate.
- Reduce the heat to medium, melt the remaining 2 tbsp of butter in the same skillet, add the rest of the minced garlic, and sauté for 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan, and simmer for 2 minutes to reduce slightly.
- Lower the heat to medium-low and whisk in the heavy cream, grated Parmesan cheese, and dried herbs until smooth.
- Return the seared chicken back to the creamy sauce, then add the drained pasta and broccoli to the skillet.
- Gently toss everything until well combined and coated in the sauce, adding a splash of the reserved pasta cooking water if needed to reach your desired consistency.
- Garnish with fresh parsley and serve immediately with extra Parmesan on the side.
