Instructions

  1. Preheat your oven to 200°C (400°F). Place the pumpkin halves cut-side up on a baking sheet alongside the onion quarters and garlic cloves.
  2. Drizzle everything with olive oil, season with salt and pepper, and roast for 35-40 minutes until the pumpkin flesh is deeply caramelized and fork-tender.
  3. Let the pumpkin cool for 5 minutes, then scoop the flesh out of the skin. Squeeze the roasted garlic from its peel.
  4. Add the roasted pumpkin, onion, garlic, and broth to a large pot. Bring to a gentle simmer over medium heat.
  5. Blend with an immersion blender directly in the pot (or carefully transfer to a countertop blender in batches) until completely smooth.
  6. Stir in the cream, nutmeg, cinnamon, and ginger. Season to taste with salt and pepper.
  7. Ladle into bowls and finish with a swirl of cream and a sprinkle of toasted pumpkin seeds.
